Topic: Chicken Tikka Masala

My first attempt at some Indian grub.

I mostly followed the recipe below...but changed it a little...because I HAVE to.

1. I used Tomato Paste because I couldn't find puree in an acceptable sized can. But that worked
fine because...

2. I added a medium sized can of diced tomatoes.

3. Instead of "plain yogurt" I used "plain Greek yogurt"

4. I added mushrooms that were capped and quartered.

The chicken was cut into cubes (1 x 1 generally) and it's marinading overnight. Tomorrow I'll cook it in my new badass slow cooker.

The Clay Pot in Austin, TX has some great Tikka Masala. I loved their lunch buffet, it's a couple blocks from campus.

I'm a big fan of Indian food, and recently expanded my repertoire by making my own paneer cheese at home to cube into my curries. Love the way Indian food makes the house stink of yum for days at a time.

Hmm. Might do that this weekend.
